Bohri Thaal – A Gastronomic Experience

My friends and I had a phenomenal experience of partaking from a Bohri thaal. This community is known for their delicious food with less spices and more focus on the meat and community eating from a humongous thaal.

A Bohra meal begins with tasting a few grains of salt for cleansing the tongue. Absolutely no alcohol is allowed during this partaking. The complete Bohra family dines from this thaal. It can typically accommodate 8 but we were 6 for this experience. Usually the family is seated on the floor but this was served to us on a table. Usually the entire is course is served together but here it was served course by course.

Each dish is placed in the centre of the thaal and every member their share towards their corner (or whatever can call it in the circular thaal . They believe food is a divine calling and absolutely abhor food wastage.

Once everyone is seated, one serving member walks with water in a kind of jug found in most high end restaurants for washing the hands.

We were served the Malai Khajia which was just right and velvety to taste. A beautiful beginning.

1. The almond soup with chicken stock was light and refreshing.
2. The mutton shami kabab and chicken reshmi kabab was succulent and melt in the mouth. Delicately spiced as is the norm
3. Surti Bawda – An exquisitely cooked shoulder of lamb which was pull of the bone and beautifully spiced. Highlight of this meet for sure.
4. Then came the dessert again of peach and whipped cream. Lovely cream but the peach was a mixture of fresh and canned. It will be better if they use only fresh ones.
5. Cheesy Chicken – Good for kids but was extremely bland for me. Needs atleast a little more spice (for me alone)

6. Bohri Biryani – Lightly spiced rice with succulent mutton. Brilliant. The combination of cucumber raitha and kokam potato was top notch.

7. Sancha Icecream – Homemade icecream.

Again a few grains of salt to cleanse the palate again. Ending with pan and dried fruits and a rub of attar to remove the smell of food from the hands.
