As one of the home chef selected for the World Health Week from Plattershare, a social platform for home chefs, I was given a choice of meat from Licious and selected the boneless mutton leg. My better half and I have also become quite enamoured with the OPOS way of healthy and fast cooking. OPOS which stands for One Pot One Shot is a miraculous cooking method that minimizes cooking time and maximizes the flavors and health benefits by using minimal oil. Since it follows exact methods and calibrations, the result is consistent each and every time. Mr. Ramakrishnan aka Ramki is the foremost proponent of OPOS and has tested and converted an unbelievable number of traditional recipes using this method

Ingredients & Quantity
250 grams mutton (licious), 1 cup diced shallots, 1 cup curry leaves,2 slit green chillies, three tbps pepper powder, 1 teaspoon salt, 2 tbsp coconut oil and 2 tbsp water
Start the magic
- Mix the pepper and salt to the mutton
- Add oil and water to a 2l pressure cooker
- Add the shallots, curry leaves and green chillies
- Add the marinated mutton
- Cook on high for 10 – 11 whistles (use your discretion and if you feel a slightly smoky smell switch off stove) and let the pressure release naturally
- Mix the contents and enjoy your mutton chukka 🙂
- I added a microgreen salad for my share of greens 🙂
These are exact measurements since OPOS method has to be done with correct measurements. If you have more mutton, make in two batches. Overall it takes only 15 mins so go ahead and discover the magic
