This requires very less olive oil since the sausages have their own oil. Put in onions, garlic, ginger, a little cayenne pepper, some origano, dried herbs, a little salt to release the water from the onion, a pinch of sugar and fry like crazy till they look sunburnt (brown) but not too dry. Add in the tomatoes and go crazy again. Once its nice and sticky add in some rum or brandy (for the non alcoholics a little orange juice will make for some interesting flavor) to deglaze the frying pan and create a nice sauce with all of the flavors. Add the sausages and toss it around like u just dont care (err make sure u toss it within the limits of the pan) and make sure the sausages are coated with the sauce. Sprinkle some parmesan cheese, cheddar and a topping of fresh herbs before serving. For the veggies u have an option of soya nuggets, paneer (cottage cheese), potato, yam and a whole lot more. Go crazy trying this with any of the vegetables especially mushrooms. Note – when adding alcohol (especially brandy or whiskey) keep the pan away from the stove or you might have to call the fire brigade…… Written for the A to Z 2014 Challenge for Y.
